Pinkalicious Cupcakes
This morning after a while of catching up on chores around the house and some fabulous morning snuggles with story time, I turned to my little yogini and asked what she would like to do for the rest of our rainy Wednesday together. With a big beaming grin she responded "make Pinkalicious Cupcakes". Ah the powers of marketing...we had just finished reading her Pinkalicious book:)
We had a fabulous time mixing, baking and decorating our "Pinkalicious Cupcakes"! Photographic evidence above of her sprinkle-covered masterpieces!
Here are some tips for making your delicious projects a little healthier, though sometimes, like today, the food is good for the soul and that's about it:)
- colour your icing with beet juice or India Tree sells natural food colourings
- use whole grain flour, or a combination including whole grain flour
- decrease oil/butter content and supplement with unsweetened applesauce to replace up to half the grease
- use real dark chocolate rather than sugary "chocolate products" ~ read the labels!
- use maximum 1 egg yolk and replace the rest suggested in the recipe with additional egg whites
- sneak in some veggies and fruit ~ banana bread muffins and zucchini bread are both just as fun to decorate
