Recipe: Spinach and Artichoke Dip
I love spending time with family and friends. There is something so comforting about snuggling up, sheltered from the elements together, sharing food and giggles! This past weekend, was my husbands family's annual "girls weekend" and Grandma's 75th birthday just happened to fall right smack in the middle of the fun! We shared a wonderful weekend together crafting, celebrating, exploring, visiting, giggling, crying (ask me about the blessing way and this will make sence!) and chowing down! I brought my Warm Spinach and Artichoke Dip to the potluck dinner and was asked to share the recipe...so I thought I would share it with all of you too! This dip is perfect if you are looking for something that is quick to make, warm, healthy and de~lish!
Spinach and Artichoke Dip ~ serves 8 people
Preheat the oven to 350 degrees.
In a food processor combine and blending until smooth:
- 1 1/2 cup fresh spinach
- 2 cans artichoke hearts (drained and rinsed well)
- 1 cup shredded skim mozzarella cheese
- 1/4 cup shredded Parmesan cheese
- 1 tsp fresh crushed garlic
- 4 sun dried tomatoes
- 1/4 tsp pepper
- 1/2 tsp lemon juice
- 1/4 tsp dried chili pepper flakes (optional)
- 1 tsp Worcestershire Sauce (optional ~ note Worchestershire Sauce is not friendly for your vegetarian friends)
Scoop mixture and spread evenly into oven friendly serving dish (eg. casserole dish) and sprinkle on top:
- 1/4 cup shredded Parmesan cheese
Cover and bake until bubbling (10-15 minutes). Remove cover and bake until cheese on top is lightly browned (5-10 minutes).
Serve with whole grain, low sodium crackers or pita bread.
